Phoning It In

Phoning it in.  From urban dictionary: perform an act in a perfunctory, uncommitted fashion, as if it didn't matter.  Like using the instagram app on my phone to take all the pictures on this post.  Then I can use their cool filters to make it look like I meant to take slightly out of focus, "vintage" pictures. 

Like using all my 2 lb of asparagus at once because they are close to going around the bend and asparagus juice does not sound appealling.  They were tossed in a little olive oil and salt/pepper before being thrown on the grill with some chicken thighs I marinated with a commercial marinade.

 And leftover bread....Sophie was delighted with this dinner that took me all of 30 minutes to get on the table.

It left me time to make some whoopie pies--the quintessential Pennsylvania treat that has undergone a resurgence as of late.  My mom's recipe in the officer's wives cookbook circa. 1977 used Crisco in the filling.  I used Fluff and felt elitist but it was a good choice.

 I "modified" (meaning I accidently used two eggs instead of one and cut back the applesauce to 1/2 cup) this recipe from Martha Stewart.

Ingredients

  • 1 1/2 cups all-purpose flour, (spooned and leveled)
  • 1/2 cup unsweetened cocoa powder (spooned and leveled)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup packed light-brown sugar
  • 1 large egg

Mix all dry ingredients together.  Cream butter and sugar together, then add egg.  Alternate applesauce and dry ingredients being careful not to over mix.  Preheat oven to 375F.  Drop by 2 TBS portions about 2" apart and bake ~12 minutes.  Remove to wire racks immediately.

Filling

1 cup marshmallow fluff

1 cup powdered sugar

1 stick butter, softened

1 tsp vanilla

Beat til creamy and spread between cooled cookies.  Decorate with nonpareils if desired.
