Berries of a Certain Age

 Elderly berries.  Not elderberries.  Just some raspberries that I bought before Thanksgiving and discovered in the garage refrigerator.  I was able to salvage enough of them to make a clafouti.  Dorie's recipe specifically called for cherries but she did allow for substitutions.

 Berry/Cherry Clafouti with my mods, from Dorie Greenspan's "Around My French Table."  A cookbook that makes you feel like you could be French.

1 lb berries or cherries

3 large eggs

1/2 cup sugar

pinch salt

2 tsp. vanilla

1/2 cup all-purpose flour

3/4 cup whole milk

1/2 cup heavy cream

powdered sugar for dusting

Preheat oven to 350F.  Generously butter a 9" deep pie plate.  Place fruit in a single layer on the bottom.  In a medium bowl whisk eggs til foamy, add sugar and whisk for ~1 minute.  Whisk in salt/vanilla.  Add flour and whisk vigorously until smooth.  Gradually pour in milk and cream, whisking as you go.  Pour batter over berries.  Bake for 35-45 minutes or until browned and  knife inserted in center comes out clean.  I made mine in a blender.  Started with eggs/sugar, blended.  Then added vanilla and salt, blended.  Then added flour and blended a little longer.  Added milk/cream with blender running.

Ooh la la!  You don't look a day over 2 weeks old.

Sophie loves sugar but has a hard time distinguishing between a dusting and a dumping so we used my piece for the picture.
