Please Sir Can I Have S'More? The weekly waffle.

Sophie's choice. The waffleman on Skype. It called for toaster waffles, but we made our own from the following recipe:
1 3/4 cup flour
2TBS cane sugar (or white sugar)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
Mix all dry ingredients together.
2 eggs
2 cups yogurt or buttermilk
1/4 oil (we used grapeseed)
1 tsp vanilla
Whisk together, then add to dry mix. Stir til just combined.
Then proceed by baking your waffles in the waffle iron. Sprinkle layer (generous if you are twelve and have metabolism of hummingbird) of mini marshmallows and chocolate chips between.
Cover with another waffle....double decker badness.
I am not a huge marshmallow fan, especially at breakfast so I combined coconut butter and nutella for a still indulgent but (slightly) more adult waffle.
Then I rode my bike on a 30 mile hilly ride. So I didn't feel guilty at all.

Talk about a total sugar rush!!! You would definitely have to ride 30 miles to burn it off. However - it looks sinfully GOOD!
Wait -- so is that dollop of white coconut oil?
it is coconut butter--found the recipe on shutterbean.com Basically unsweetened coconut processed in food processor with a bit of salt and some agave. So I had an almond joy waffle :)
